24-hour breakfast burrito

Sometimes you just need a hearty breakfast meal at 6 pm. And that’s nothing to be ashamed of. With rich, smoky flavors, you can eat this breakfast burrito at any meal! Or, if you’re feeling more traditional and want to eat it at breakfast, the burrito component makes it a great meal on the go.

The Shopping List

  • 1 dozen tortillas, extra large
  • 2 tablespoons butter
  • 1 dozen eggs
  • 3 links Andouille sausage
  • ½ cup vegetable oil
  • 2 large brown potatoes, chopped
  • ½ yellow onion, chopped
  • ½ bag potatoes o’brien
  • 8 ounces mild cheddar cheese, shredded
  • 8 ounces jack cheese, shredded
  • 8 ounces mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 avocado (optional)
  • ½ cup chives, chopped (optional)
  • ¼ cup cilantro, chopped (optional)
  • Salsa
  • Salt and Pepper to taste

Let’s cook!

Make sure you have the cheese grated and your potatoes and meat chopped and ready to go before you start cooking. Heating everything up in the shortest possible time ensures the best freshness and flavor. If you have a few helpers that aren’t too sleepy-eyed, ask them to chop, grate, destem (the cilantro), and wash pots as you cook. There’s no such thing as too many cooks in the kitchen for this recipe.

Potato Mixture

Saute onion for a minute with the garlic powder, salt, and pepper in the vegetable oil. Add in the chopped potatoes and the frozen potatoes o’brien. Cook until tender and well-browned on both sides.

Andouille

Chop the andouille into small chunks. Pan fry it until fully cooked, then remove from heat and set aside.

Eggs

Scramble the dozen eggs in the butter, adding salt and pepper to taste. Remove from the heat right when they finish cooking so they don’t over cook.


Assembling the burrito

Take a warmed tortilla. Spoon egg, sausage, potatoes, cheeses, and a spoonful or two of salsa in the center. Fold in the ends and roll it up.The chives, cilantro, avocado, salt, and pepper may be added inside the burrito or on top with additional salsa if desired. Use only the ingredients you prefer to make it your way. Customize each burrito for its owner – and don’t lose any sleep over it!
