Breakfast Bites

A tasty protein, whole grain, and fiber breakfast cookie to start your day off right. You will want to double the batch!

The Shopping List

  • 1 1/2 cups old fashioned rolled oats
  • 1 cup walnuts
  • 1/2 cup ground flax meal
  • 1/3 cup wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • pinch of red pepper flakes
  • 1/2 cup almond butter
  • 1/3 cup brown sugar
  • 1/4 cup agave nectar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup semi-sweet or dark chocolate chips
  • 1/2 cup walnuts
  • 1/4 cup finely chopped walnuts (optional)

*Optional: Substitute your favorite dried fruit or nuts.

Let’s Cook

Line the baking sheets with parchment paper.

Preheat oven to 375 degrees.Pulse the walnuts in a food processor until ground into flour.

Mix together walnut flour, oats, flax meal, wheat flour, cinnamon, baking soda, salt, and red pepper flakes.

Blend the brown sugar, almond butter, vegetable oil, agave nectar, vanilla extract, and egg in the food processor till well combined.

In a large bowl, add the chopped cherries and chocolate chips to that.

Next, add the oatmeal mixture and stir until well combined. This will be thick!

Use an ice cream scoop to form dough balls and place them about 1 1/2 inches apart on the cookie sheet.

Bake about 7 to 9 minutes. Remove and flatten lightly with a spatula. Let them cool about 5 minutes before moving them onto a wire rack to cool completely.

Makes 2 dozen. These healthy treats freeze well if you can keep them that long!-4
