Grab & Go Cups

Use your muffin tin to make a tasty granola base holder for some of your favorite yogurt and fruit fillings. Or go crazy and fill it with cream cheese or another wild ingredient!

Shopping List

  • 1 1/4 quick-cooking oats
  • 1/3 cup wheat germ
  • 1/4 cup chopped almonds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/2 cups dried cranberries
  • 1/2 cups dried apricots
  • 1 teaspoon lemon zest
  • 1/4 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 1 large egg
  • 1/2 cup honey
  • 1/4 cup vegetable or canola oil

Let’s Cook!

Mix together oats, wheat germ, chopped almonds, roasted chopped pumpkin seeds, and sunflower seeds, chopped apricots, cranberries, lemon zest, salt, allspice, and cinnamon, in a large bowl.

In a separate bowl beat egg and add oil, honey, and vanilla. Fold into the dry ingredients.
Divide mixture into a well greased 12 cup muffin tin.

Press the mixture up the sides with damp fingers and the back side of a spoon forming small cups.

Bake at 350 about 20 minutes until the cups are set and edges browned. Cool several minutes before removing to a cooling rack.

Fill with your favorite yogurt, fresh fruit, and or/almond or peanut butter. Play around with the filling ingredients!
