Pumpkin Squares

 

No oven for you! Protein-packed morsels of energy that are vegetarian and vegan! Enjoy!

The Shopping List

  • 10 ounces chopped dates
  • 1/3 cup pumpkin puree
  • 1/4 cup Agave nectar
  • 1 Tbsp. flax seeds or chia seeds
  • 3/4 tsp. ground cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/8 tsp. chili flakes or powder
  • dash of salt
  • 1 cup old-fashioned dry oatmeal
  • 1 cup toasted pumpkin seeds
  • 1 cup toasted coconut flakes

Optional: chocolate morsels

Let’s Cook!

In a food processor, blend pumpkin puree, honey, dates, flax or chia seeds,

ginger, cinnamon, nutmeg, chili spice, and salt. Pulse until mixture is smooth.

Move mixture to a large bowl and add the oatmeal, coconut flakes, and pumpkin seeds.

Mix gently, then cover and refrigerate for 40 minutes.

Shape into balls the size of your choice using a spoon or small ice cream scoop.

You also could make bars by pressing mixture into a medium size pan lined with parchment paper. Cut after chilling for about an hour.

These will keep over a week in the refrigerator and they also freeze well!
