The Shopping List
- 10 ounces chopped dates
- 1/3 cup pumpkin puree
- 1/4 cup Agave nectar
- 1 Tbsp. flax seeds or chia seeds
- 3/4 tsp. ground cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 1/8 tsp. chili flakes or powder
- dash of salt
- 1 cup old-fashioned dry oatmeal
- 1 cup toasted pumpkin seeds
- 1 cup toasted coconut flakes
Optional: chocolate morsels
In a food processor, blend pumpkin puree, honey, dates, flax or chia seeds,
ginger, cinnamon, nutmeg, chili spice, and salt. Pulse until mixture is smooth.
Move mixture to a large bowl and add the oatmeal, coconut flakes, and pumpkin seeds.
Mix gently, then cover and refrigerate for 40 minutes.
Shape into balls the size of your choice using a spoon or small ice cream scoop.
You also could make bars by pressing mixture into a medium size pan lined with parchment paper. Cut after chilling for about an hour.
These will keep over a week in the refrigerator and they also freeze well!
*These are so tasty that you will want to double the batch!
