Yes, you read this right and they are flour-less and gluten/dairy free as well!
How can this be? These healthy brownies are made using Sweet Potatoes, a natural sweetener.
They are loaded with vitamins, minerals, fiber, and have anti-inflammatory benefits as well.
The Shopping List:
- 1 cup (packed full) cooked/ mashed sweet potato
- 1/2 cup smooth almond butter (or nut butter of your choice)
- 2 1/2 Tablespoons maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/4 cup carob chips
- pinch of coarse salt
Preheat oven to 350 degrees.
Grease and line a small pan with parchment paper (9×9 works).
Melt together almond butter and maple syrup on stove over a low heat till combined.
In a large bowl, blend together the mashed sweet potato, maple syrup almond butter mixture, cocoa powder, and pinch of salt.
Fold in the carob chips.
Pour into pan and bake for about 20 minutes or until done using toothpick to test.
Cool completely! Refrigerate for at least 20-30 minutes to make slicing easier. Then chill a few minutes longer before plating or storing.
Top squares with walnuts or almonds if desired.
These will keep about a week…if they even make it through the day.
